Around my house, I call this one “Pumpkin Angel Food Cake”…but Super-Moist-Can’t-Get-Any-Easier-Than-This-Cake fits it so much better. I take this to pretty much every potluck I’m invited to, and people ALWAYS love it, and are ALWAYS shocked at just how easy this is…and that it is pretty good for you.
I prefer the flavor of the pumpkin pie mix, over plain pumpkin, but you can substitute and it will lighten up the recipe even further. If you substitute, you may want to add a bit of your favorite sweetener and a sprinkle or 2 of pumpkin pie spice.
- 1 Can Libby's Pumpkin Pie Mix, 30 oz
- 1 Box Betty Crocker Angel Food Cake Mix (or Duncan Hines)
- Preheat your oven to 350 degrees. Lightly spray a 9x13 baking dish with cooking spray. In a large bowl, mix together pumpkin pie mix and angel food cake mix. No need to use a mixer, a spatula will easily do the trick.
- Pour prepared batter into pan. Bake at 350 for 45 minutes, or until an inserted toothpick is clean. This cake will be very moist, and slightly tacky on top. Don't worry, it is done.
