My resolution in the new year is to try a new recipe each week. A fellow WW member recently shared how she and her hubby were each picking out a recipe each week. So, I brought the idea home, and my hubby agreed. The awesome thing, he picks out completely different recipes than I ever would!
Last night we tried Tomato-Basil Lasagna with Proscuitto from Cooking Light. It was a HUGE hit. At 7pp for 1/9th of a 9×13, it is also a caloric steal!
I did modify it a bit. The recipe calls for a 26 ounce bottle of FF pasta sauce, but I couldn’t find any larger than 24 ounces, so I added in about a half a can of Italian style diced tomatoes (no added points).
We visited the deli counter at our grocery store too, and had them cut just the amount of prosciutto we needed. It was way cheaper than buying it pre-sliced. Next time, I’ll have them cut the pieces very thin, so they go further in the recipe. And, don’t skimp on the Romano, it adds such a great flavor.
Also, I threw everything in the Vitamix for a super smooth cheesy filling, and added a bit more garlic. This recipe was easy, tasty, and pretty simple for a weeknight.
