I’ve been a Weight Watchers member for ages. It seems like forever. The one thing I do know for certain is that their Points Plus system works. I’ve been on the wagon and off, but if you work the program, it will work for you.
When Weight Watchers debuted Simple Start, I though, no way I’ll try it. Maybe add in a few power foods, but I have issues with knowing when I’m full, and I didn’t like the restrictions.
After long-time members were losing BIG numbers, I decided to give it a whirl. I’ve eaten Simple Start foods since Saturday. Today’s Monday, and as of this morning I am 6.8 pounds lighter than I was on my weigh-in Saturday (by my scales). I was shocked yesterday morning when I was down 2.2, so you can imagine my reaction this morning!
In honor of my Simple Start trial, I whipped up a childhood favorite, “Eggs In a Basket.” It is known by many names, but I know it as a delicious comfort food that is Simple Start friendly!
- Pam Cooking Spray (or a tsp or so of olive oil)
- 1 piece of light whole wheat bread
- 1 egg
- Warm a pan over medium-high heat. Spray your pan with Pam or with olive oil. Meanwhile, using a biscuit cutter, or the end of a drinking glass, cut a circle out of the middle of your piece of bread. Place your bread in the pan, and break 1 egg into the whole. Let bread/egg cook for 1 minute or so (letting the center setup some), then flip. Cook another minute on the other side. I stopped after 2 minutes, however, you can continue to cook as long as you need to get the egg and the bread as browned as you prefer. I reserved my "circle" to dip in my yoke. Feel free to toss yours in the pain and toast. Or, use an indulgence and put a little jelly on top.
