2-Ingredient Pumpkin Cake

Lets be honest, it doesn't get any easier than 2 ingredients! This recipe is a fan favorite. I'm asked how to make this ALL THE TIME! Even my little southern grandmother loves it - it's a regular on her table all year round.  This recipe is a bit different because it calls for a can of pumpkin pie mix and not just plain pumpkin.  Can you sub plain pumpkin? Sure...but, you'll need to play with the seasonings and add some sugar or sugar substitute. Pumpkin pie mix comes pre-seasoned, making it a fool-proof secret ingredient.

2-Ingredient Pumpkin Cake Essentials

This 2-ingredient pumpkin cake also calls for angel food cake mix.  While angel food cake is squishy and usually dry to the touch, this cake comes out moist and delicious. You wouldn't know that angel food cake mix is a power player.

This pumpkin cake also packs 75% of your daily values for Vitamin A, which some studies say is good for immune health.

Store leftover pumpkin cake covered in the fridge.  We enjoy it with whipped topping, or a combo of Swerve Confectioners Sweetener & cinnamon....not required, it's just a happy bonus.
