Breakfast Sausage Wonton ‘Cupcakes’

These Breakfast Wonton Cupcakes are the perfect way to start your day. Make them in advance for easy breakfast meal planning. They pack plenty of protein to keep you full and energized all morning. The seasoning mix creates the perfect breakfast sausage flavor - you won't even know you're eating turkey sausage.

To bulk them up even more, feel free to add extra egg whites and/or cheese. I've used an assortment of different cheese blends as well - and all come out great. If you'd like a little more of a "kick," then up your red pepper flakes. The breakfast wonton cupcakes also turn out great with 93% or 99% lean turkey. You could use a higher fat version, but may want to drain off extra fat. 

After using a metal cupcake pan forever, I've switched to a silicon cupcake pan, and love it! I no longer have to use cooking spray, and these pop out easily. You can also just top it with foil and store in the refrigerator as-is. These warm up well in the microwave.

Breakfast Turkey Sausage Wonton Cupcakes, High Protein, Easy to Make

 1 tbsp Swerve Brown Sugar (or other brown sugar alternative)
 1 tsp Black Pepper
 ½ tsp Smoked Paprika
 ¼ tsp Rubbed Sage
 ¼ tsp Crushed Red Pepper
  tsp Salt (double if using Kosher Salt, and not table salt)
  tsp Allspice
 8 oz 93% (or 99%) Lean Ground Turkey
 4 Slices Center-Cooked Bacon
 ½ cup Liquid Egg Whites
 3 oz 2% Shredded Cheddar Cheese
 12 Wonton Wrappers

Preheat oven to 375. Spray a standard size metal muffin pan with cooking spray (skip if using a silicon pan) and set aside.

Press 1 wonton wrapper into the bottom of 12 muffin pan cups. Cut or crumble bacon into pieces and set aside. Measure egg whites and cheese and set aside.

Spray a pan with cooking spray. Heat over medium heat on a burner. Add ground turkey and seasonings & swerve to pan. Break up and stir meat and seasonings until cooked through.

Once meat has cooked through, add bacon, and stir. Then, add egg whites. Stir until eggs are set. Remove from heat. Stir in 2 oz of cheese until well incorporated.

Scoop filing evenly among muffin tin cups. Sprinkle remaining cheese on tops of each muffin cup. Bake for 9-10 minutes, or until cheese is melted and wonton pieces begin to crisp.
