This protein cheesecake is made with simple ingredients like Greek yogurt and sugar free pudding mix. No need for special pans, protein powder, or a lengthy bake time. Although it may not have a crust, this protein cheesecake makes up for it in flavor and protein.
So, what's the secret? Adding the ingredients to a high speed blender (I love my Vitamix) or food processor whips air into the mix and makes it extra creamy. No blender, no problem. You can still hand mix this and have a delicious texture and flavor. Free free to play around with your pudding mix and extract flavors to make this your own! For an extra decadent treat, make my no sugar caramel sauce and top your serving.
Don't like Greek yogurt? Don't worry, you won't taste it at all.
Other Protein Cheesecake tips?
If you don't have liquid egg whites on hand, 3 regular eggs, 3 whites from eggs, or Egg Beaters will work beautifully.
I love to be extra indulgent and eat 1/4 of the recipe at a time - why not! If you're like me and want a larger portion, you can split the batter between 4 mini pie pans like these cute Pioneer Woman pans. If you do that, reduce your baking time to 20-25 minutes, or until set. Top with my no sugar caramel sauce Reddi Whip, and sprinkles for extra fun.

Preheat oven to 350 degrees.
Spray a 9" pie pan with cooking spray.
Blend all ingredients in a blender (or whip by hand if unavailable). Blend until mixed well and air bubbles whip into mixture. Pour into prepared pan.
Bake for 25-30 minutes. Cool on countertop, then refrigerate for at least 2 hours. Mixture may still jiggle when removed from oven, but will firm in refrigerator.
